Iced Coffee

Iced coffee is a cold and more refreshing variant of a regular cup of coffee. It cools you down and clams your thirst during those warm and sunny days; it is a blessing during summertime.

One would think that iced coffee it’s quite simple to make – just make coffee using your regular brew method and then pour it over iced and you are good to go. But coffee is a fragile beverage; it is very sensitive to brewing techniques and doesn’t uphold extreme change in temperatures well. Often, the result is a sour, acrid, weak and watery iced coffee.

So, how can you avoid these errors? Simple, brew your Cubico Coffee following the “Japanese method” or hot brewing. In this method a pour-over brewing system is used. Coffee grounds are placed in a pour–over filter, bellow is a glass decanter or carafe fill with ice. The coffee is brewed directly onto ice, so that is cools instantly. That instantaneous cooling process helps preserves the coffee’s integrity, as it bring out the natural acidity and flavors of the coffee. You don’t have to worry about a watery cup, since the amount of ice is determine into the overall water content.

The hot brewed method is all about good acid and highlighting the coffee’s top qualities. Select an aromatic coffee with floral and fruity notes and pronounced acidity. Cubico Coffee recommends a lightly roasted fruity and flowery African coffee. Specifically, our Light City Yirgachaffe Birhanu from Ethiopia.

It doesn’t matter where the coffee comes from or if its roasted Light City, City or Full City, a good iced coffee should be strong and black to hold up the ice. Iced coffees pack a potent knock so add lots of ice, milk or cream. Alter the drink to your liking. If you want to try it, follow our instructions below.

You will need

Chemex, filters, pouring kettle, grinder (optional), scale, ice, filtered water and of course your Cubico Coffee of choice.

Preparation

1. Weigh 8 oz of filtered water. Fill kettle with water and heat it. Just before boiling, remove kettle from the heat source. Allow the water to settle for 30 seconds.

2. Place Chemex on the scale and add 8 oz of ice cubes.

3. Rinse Chemex filter with hot water to remove the papery taste. Place the filter in the Chemex.

4. Weight 3 oz of your Cubico Coffee and ground it medium to coarse. Skip this step if your Cubico Coffee is already grinded.

5. Add the grounds into the filter. Shake to level the coffee.

6. Begin pouring enough water to just saturate coffee bed. Let it bloom for 30-45 seconds. Pour the rest of the water in a slow circular motion just enough to wet the grounds. Wait 30 seconds. Continue adding water over the grounds.

7. Wait for the brew to finish (approximately 4 minutes). Remove and dispose the filter.

8. Serve over ice. Drink it black or add milk, cream, sugar or syrup.
